Default Updating 2018.2 to 2019.5

how do you do it and is it considered part of the annual upgrade plan?

... and have a bootable backup of your system disk and archives of your sessions just in case very bad things happen.

Do you directly update or do you uninstall the older version ?

We never uninstall any older version on Mac but I heard with PC you need to uninstall older versions first.

So I just run the 2019.5 installer and get up and running ? or is there anything else to do ? (I am asking if I want the workflow and Pro Tools to work smoothly without errors)

Nothing elee to do. If you use the HD driver then install that too.
