I also use the es8 and tend to track the sounds as I build the song. I often will ALSO track the midi for each part, (but leave the midi track muted) just in case I get a good performance, but with little mistakes(edit the midi, and re-record the audio using the midi track to "play" the last pass). I use mostly VI plugins, but sometimes, the Motif just has what I want

I usually do the MIDI first and when its right, I let the MIDI track "play" my performance to lay down the track.
