As far as my favorite vi's in no particular they are:
NI Kontakt 5 (sampler)
IKMM Sampletank 3 (sampler)
Air Velvet for Rhodes
Arturia Synclavier V
Arturia Moog Modular and MiniMoog
+1. I'm back to doing everything in PT; I want to simplify my life...

Some VI's that I use (in no particular order):

Spectrasonics Omnisphere, Atmosphere, Trilian, Trilogy, Stylus
NI Komplete (lots of VI's there)
Arturia (I have most of their VI's)
Synthmaster
Uhe VI's are good, but usually CPU-hungry
Serum
Avenger
Steinberg Halion (and Hypersonic!) Dark Planet is great for pads.
Cakewalk Rapture
Air (Loom, Hybrid, Strike, Velvet)
Addictive Keys
Dmitry Sches (Diversion, Thorn)
Sonic Academy Ana 2
Rob Papen Albino, Albino 3, Predator, Blue, SubBoomBass
Plugsound (I have the old ones)
Sylenth
Nexus 2
Vanguard
Dune
UVI
Reason
Linplug VI's

The list isn't complete, but these ones get a lot of use. Even with 64GB of RAM, PT acts funky sometimes when there are many VI's loaded, so on heavy MIDI/VI sessions I use VE Pro to host VST versions of most of them. Very smooth, PT's relieved of the load, and I commit when I'm done programming. On lighter sessions I load the AAX versions directly into PT.
