Most microphones are mono, you cannot record a stereo signal directly from those microphones.

What exactly are you trying to record? And with what make/model microphone?

It is impossible to guess what you are trying to do or how much experience you have. Many questions like this reflect a misunderstanding of how most "stereo recordings" are made.... with mostly mono sources panned into a stereo soundfield at mix time.

If you are trying to record true stereo, say with an XY mic pair recording in a live space like a choir or live drum set then yes you are going to then record to a stereo track, otherwise you should be working with a mono track in Pro Tools and just panning that into a stereo output/bus.
