I've had the tracker for years, but it's not something most people use. I even forget about it. It's easier to google the question. In any case, I think we've established what can and cannot be done as far as OS rollbacks go, though I'm still curious to know if current Macs which ship with Big Sur can go back to Catalina? I'm relatively certain that M1s must use Big Sur (so claims Apple, but has anyone tried it?), but what about Intel machines?

Again it depends on what was the OSX in use at the time the particular Mac was released. This is why using MacTracker is the way to go - that would answer your question right away. But for some reason you refuse to use the program. To save you that burden I looked it up for you (no thanks needed) and everything EXCEPT for the M1 machines can back date to Catalina.

2021.3 has been rather stable here and on a few coworkers' machines. A few of the regular bugs/issues aside, it opens, operates, and gets the job done. It feels like the frequency of CPU spikes has dwindled to some degree but I have no scientific proof. Sluggishness still tends to come when using older plugins.

This sounds crazy, but has anyone noticed degraded tab to transient behavior? This feature seems to be performing much worse with this update than I am used to.

Yes, I am noticing that it is inconsistent. Missing obvious transients sometimes, grabbing them other times. ALmost depends on zoom level it seems. I don't know but it is super annoying.

Yep. This update is missing very obvious transients when drum editing. What seems to help is pulling the cursor almost a full beat back, then tabbing, but something has definitely changed for the worse regarding tab to transient.
