Default midi piano sound quality

Can anyone tell me what effects the quality of the piano sound that is finally recorded via midi. I own a yamaha clavinova 880 (pretty good quality) and would like to know if it is better to just mic the amp or record via midi. Also, I can't seem to get the levels into they yellow range while recording midi piano, even when I increase output via hardware setup.

Any suggestions?
