Default High Sierra

OS X is the old name for macOS. You download macOS from the Mac App Store. Apple normally gives access to old versions of OS X and macOS in the Mac App store if you have downloaded them before (when they were current), otherwise it is only the currently release (which is High Sierra). You can Apple contact support and try to ask for access to older versions if you really need it. Or wait until stuff is supported or known to work well enough (which may be now) and upgrade to High Sierra or use a recovery partition to reinstall.... or.... all depends on what you are trying to do and why.

None of this is Pro Tools specific, you should be able to Google and find out all you need on getting macOS or OS X installers.

El Capitan is the last OS available on the "purchased" tab... While High Sierra can be of course downloaded from the App Store, here's the link for Sierra (go to "Get Sierra from the App Store": https://support.apple.com/en-us/HT208202

Beware though, that many computers can't install an older version of the OS than the one they shipped with.

Yeah it's pretty doubtful that sierra will be given drivers for the new iMac pro in an update... Also, I'm sure high sierra is technically working with PT 12 I am more worried about the combination of a whole new computer with all new drivers and components AND a new operating system. Sounds like way too much of a headache for me. I'll just wait a few months and see if they come out with a new mac pro.

PT 12.8.1 and 12.8.2 crash consistently after 20-30 min of use on High sierra for me. Is that expected or happening to others?

I suspect it's not happening or we would hear about it. What exactly happens? What type of crash?

With that kind of general behavior one thing to suspect is plugin memory leaks. What does the macOS Activity Monitor show you for memory usage? esp. the the memory pressure graph? Does it keep getting worse as you use Pro Tools? Try removing all plugins from the plugin folder and trashing prefs and restarting Pro Tools, etc.

Running Pro Tools HD12.8.2 (latest update) on High Sierra (latest update) successfully. No noticeable issues so far.

However I've seen that can get problematic with particular plug ins (SSL Duende for example) or other DAWs (Logic 10.3.3)
on the same system.

Pro Tools itself is working well here. As yet.

Avid updated the Pro Tools compatibility document and Pro Tools 12.8.3 is compatible with High Sierra

Pro Tools
macOS 10.13 (High Sierra) is supported with Pro Tools 12.8.3 and higher (macOS 10.13.2 required). Note that there was no Pro Tools First 12.8.3 release).
