you'll have to buy a software encoder from Dolby Labs....

OR....... you could track down a copy of Sonic Foundry's "Soft Encode", which will only run on a pee-cee. This was out for about a month before a number or lawsuits got it yanked from the market. It will encode 6 channels of audio into something called a "Dolby Digital .WAV" file, which tricks most home receivers into thinking it's seeing a DVD PCM bitstream.
However, some players/receivers wont be fooled, revealing a seriously nasty digital noise (all bits on), so if you manage to pull this off, keep your volume down when you try it.

Apack, which comes with DVD studio pro will also encode your 6 full-bandwitdth audio channels into a Dolby Digital compatible bitstream, but you will not be able to put it on a cd and play it back. You'd have to author a DVD with no picture and play it back that way.
Good Luck

I believe it's possible to burn a 5.1 cd with DTS . You should end up with a 44.1 16-bit surround mix that should play properly on any cd/dvd player with an S/PDIF out to a receiver with a DTS decoder. I think.

You need a seperate audio file for each surround channel (6 total).
