Apple uses RAM chips supplied by Crucial, one of the best in the business.

Most desktop model macs (and some laptops) do have the ability to have their processor upgraded. Upgraded to what depends on the system architechture and build of the computer, but there are several companies that make this type of product. Do a search on CPU upgrades if you want to see some user results of installing an upgraded processor.
