In standalone mode, what does 8x4x2 mean?

On the 002, 8x4x2 means:

8 main inputs (channel strips)
4 sends (2 external, 1 to reverb, 1 to delay)
2 main mix outputs

I'm sure the product info/online manuals on Digi's site should provide you with enough detail about Standalone mode.

exactly...standard mixing board configurations are usually specified as ;
>xxinput channels >xxbusses >xxoutput channels
