Hi Dave, thank you for taking time to look at this issue.
So I tried this this morning :
Uninstalled ws 3.4 (that works with eMix 6.0.3), removed any legacy Eucon and Euphonix folders to be sure.
Installed 3.6.1.
Selected the proper NIC, then quit MC_client and then relaunched it.
Disconnected from Windows and then logged back in and checked the registry :

As you can see the Eucon pane preferences are not writing to the registry.

I tried inputting the registry value manually (with the NIC MAC address) to see if it would change the Eucon pane value but no go.

Now if I launch Euphonix.cpl (the pref pane) with as Admin (right click), and choose the proper NIC, NOW it writes to the registry (see pic).
But launching the pref pane normally from the Control Panel reverts to "Use all interfaces".

OK so I enabled the Windows Admin account, and it works in that account, but not when I revert to my usual account (which is also Admin).

I installed Nuendo7 and WS 3.6.1 on the formerly hidden admin account, and Eucon connects and works. THis is so frustrating. What difference is there between Eucon 3 (that worked fine) and Eucon 4 that causes all this mayhem?
I have gone through all the hoops of changing the ownership of the c: drive to be sure that it is owned by my usual account (as I said, which is admin also). Going bonkers here on that problem.

So after having thoroughly trashed my Windows install trying to solve this, I have decided to do a clean Windows 10 install again...
10 Creators is installed, and it works, even though I couldn't find the Eucon pref pane.

I'm glad you are running, Search for Control Panel and then you should see the EUCON prefs
