Hi, after bouncing at 16/44,1 wav and setting iTunes preferences>advanced>import>MP3 encoder, iTunes doesnt convert them to MP3, still gets as 16/44,1 wav. Is that the right way to do it, right? Thanks!

Is it possible to not know www.google.ca is a great tool....?
http://www.mp3-converter.com/mac_mp3_converters.htm Try some of those. Should be able to set mp3's in better quality on atleast one converter. Read carefully about whatever one(s) you choose.
