double click the colour bar at the side of a track name in the edit screen and the colour palette opens. Then select as desired.

He might be referring to the hidden feature of changing the channel strip color.

Double click on the color bar of any track to launch the color palette. while holding down all three modifiers (command/control/option) click and drag with the mouse to choose your desired density of color.
enjoy,
drew

...Interesting...I think that there is no reference to this option in PT guide. However I might be blind as well ;-)
I want to ask you one more question: How do you make a track name framed by the colour square?
Thanks

The colored squares indicate which channels your control surface is controlling. Usually in banks of 8. The first colored square would be the first channel of your controller.
Peace,
Brandon
