OK, make sure you use a 75 ohm cable with a BNC on one side and RCA on the other.

Actually not sure this will work as I'd have to find an 4k hdmi audio extractor that has a coax rca out instead of Toslink Optical. The one I have now has the latter, and haven't been able to find one that coax connector.

Of course I have a Hosa Coax to Optical converter box I can try...

Since I'm installing Catalina (no not to run Pro Tools) anyhow I'll test if the Apple TV on Catalina lets me record the output.

Well that worked like a charm. Installed Catalina on a spare SSD. Installed Garage Band and Logic Pro, and Adobe CC, and XCode, and.... Tried to install Soundflower but it won't install and only currently only mentions as far as Mojave, and I'd not hold my breathe with that project. Installed Rogue Media Loopback. Set the Loopback Channel 1&2 as in the screenshot and picked Loopback Audio as the Input device in Garage Band or Logic Pro preferences, and it recorded the stereo audio of some trailers running in the Apple TV app just fine. Who knows if there are more complex content protection on some content etc. And obviously I hope you have use permission or are making fair use of anything you record.

Very interesting! As I mentioned though, I have no interest in recording anything from the Apple TV, just want to hook it up for playback through my system...
