Default multi mono/stereo inserts

In what situations would you want to use one over the other? The only use for multi mono that I can think of is on an aux track used to effect a group of mono tracks.

Some plug-ins don't have stereo versions - that would be an excellent reason to use multiple mono versions.

You can also use multiple mono instances of rewire to bring in more than just the primary audio outs from a rewire client. For instance, reason has 64 outputs. Mono instances of rewire give you the ability to choose any of the 64 where a stereo instance only allows you to choose 1 and 2.
