Yes, you can automate plugins. I can't speak on VE Pro as I haven't used it...

There's a good video tutorial over on Groove3 showing host automation in VEP. http://www.groove3.com/str/Vienna-En...Explained.html

Thanks Chuck, I'll check it out.
Chris- my question was specific to VE pro. No need to chime in if you're not hip on the topic.

Yes you can, but you must prepare each VEP Pro instance you use (because each instance has a different mixer).

In each instance of VEP, you must allocate each volume, pan, volume send, etc to an automation parameter (called "param1", "param2", etc up to "param512").
-> Menu View / Automation Mapping (F5)

You have an auto-map feature which will make this for you (it is faster, and will allocate parameters the same way for all instance but may not suite your needs).

(note : You can also use MIDI CC instead of automation parameters).

Then in Pro Tools, you simply needs to enable all the parameters you want to automate in the VEP instance's plug-in window (like you would do for any plug-in) but parameter's names are generic (will only show "param1" to "param512").

So it may be better to use the same numbering for each instance to make it easier to use (ex : param1 to 32 for volumes, param33 to 64 for pans or always use auto-map for each instance).
