Is there a way to select all Audio tracks and assign them to ...say BUS 3-4, instead of selecting track by track?

Press the alt key while selecting.

Thanks... is there any way to select only certain tracks? Or do I need to remove them temporarily from the track list?

Hold Ctrl and click Track Name, then select which tracks you want to assign, then hold Alt+Shift and assign destination or source.
