Good workflow. You can use sends too, so you don't have to reassign the output. Just set the to pre or post fader according to preference, and adjust to unity. Then offline bounce.

Just highlight the portion you want in the editor. Make sure you have 'Link timeline and edit selection' active. Now when you bounce you just get that piece.
