Yes it is possible to use one's jam points as it says so right on the page I linked to earlier. My purchase went through with them no problem.

The 30 day deal is the free products will remain available in one's IK User Area for a period of 30 days after the close of the promotion. And claims for promotional items cannot be made after that date. As far as registration it's for the purchased product which must be made between Feb 13 and Feb 28 of 2014. No mention of how long a period exists for registration of the promo freebies.

On a related note, can anyone recommend a MIDI pedalboard or midi volume/wah pedal for this kind of stuff? I work with guitarists, so I'm planning to buy in here... I just want to make sure I have the necessary hardware.

Most of Hendrix is already in Amplitube 3.
