That is a good question.

I myself am happily using a 2013 trashcan (HDN) which in turn replaced a 2009 cheesegrater (HD3accel) which replaced a 2005 g5 pcie powermac (HD3accel) which replaced a 2003 g5 pci powermac (HD3) which replaced a 1999 g4 powermac (MIX3)... been always buying old model workstation just before new ones are supposedly coming.

Completely different than laptops etc which I always buy right after a new model is released.

EDIT:
With that said, I have upgraded my current (2013) workstation with a 10-core 3.0GHz processor (custom model, never sold by apple) which gives me just enough more oomph compared to the original 4-core 3.7GHz processor that I can think of using this for some time to come. Didn't want the standard 12-core processor because it is significantly slower in single-core tasks and in multicore it is only marginally faster. Same reasoning why I still have 64GB memory as that is the largest configuration with 1866MHz chips, if I needed 128GB the memory performance would take a hit.

I don't use laptops and why would I shop for yesterday's performance and I/O? You don't buy modern hardware for the sake of being on the edge of technology, but for performance and future proofing.
Sure, everybody has different needs, but why would I buy a 2013 trashcan MacPro in 2019, that is ridiculously overpriced (even used) for what it is, and has obsolete I/O? Because of Avid's inability to keep up? So you buy a horse instead of a tractor, because your mechanic only knows how to fit horse shoes? Get rid of that mechanic and get a good one. I wish we had that option.

Another good question. But as I tried to point out this support being late thing has been status quo for at least past 20 years so I have kept myself on the safe side having slightly older workstation that is fully supported, being able to install older OS if needed -- compared to buying something bleeding edge for fun and testing, which now (APFS container/volumes) is easier than ever.

This 2013 trashcan is not FULLY supported anymore due to a processor Apple has never sold, but now I don't really care

The issue with that ist, that Apple doesn't sell slightly older workstation computers. Trashcan and iMac Pro are your only options if that's the route you'd like to go.

Yes, drop the slightly for my current box, but before that it was 1999-2003-2005-2009-2013

All this was why I bailed for Windows years ago rather than upgrade my Mac to System X.

There no doubt must be some relatively obscure but critical features for some that are incompatible with Mojave. I learned to always have a backup drive with the previous OS on it.
