Getting destructive record in non-destructive mode
I've got a track with a bunch of notes in it. I have 'normal' selected for record mode, but when I record, it's overwriting the existing information anyway.

What do you mean "a bunch of notes"
Are you talking about MIDI? If so, you are probably talking about MIDI Merge. Thanks very much for the answer--I found it myself noticing the MIDI Merge button was off, so that was it.
