How do they bounce to QT which has been deprecated as 32bit long time ago and does not exist in Catalina at all?

It's so simple and there's no excuse for Avid to have footdragged this long by not implementing this. And then not communicate with its users, some of which have new Mac Pros.

In Logic Pro 10.5.1 it's called:

EXPORT AUDIO TO MOVIE

And it works.

All it does is replace the audio in the movie; exactly how you can also do it in Quicktime 64-bit standalone (but that's very cumbersome).
