Default recording midi into pro tools, YOUR approach

i am trying to use pro tools as a sequencer instead of using my triton. what should my approach be? i have tried and i have latency problems, i would really like to make this work. it would make life alot easier for me. should i record one track at a time or do the whole sequence midi and then bounce?
WHAT IS YOUR APPROACH TO MIDI VIA PRO TOOLS?
