If I were you I would head over to
www.groove3.com and buy a month all access pass. There are lots of great videos that will get you going. I particularly recommend the Kenny Gioia Music Production - Pop. In this, you basically watch him produce a track from start to finish.
The AIR Users Blog is also a good source of info and lots of good video tutorials.
As for books, the Pro Tools 101 book is quite useful.
