I've never used the function in the Options>Misc tab for talkback. I just patch it to a channel and route from there. As for your switching question, my solution is to use a Boss FS-5U footswitch connected to the footswitch input on the console. I then create an event that opens my talkback channel when I step on the switch, and mutes when released, keeping my hands free for running the console.
