So... doing more research - it turns out that the current 16" MacBook Pro's were originally shipped with Catalina....

Big Sur is loaded as the current OS - which apparently means I can at least load Catalina

This will only work until the next MacBook Pro update - which people are expecting int Q1 of 2021

So that kinda answers my question... New MacBook Pro it is...
