If accidental level adjustments are a concern, then a switch would be the better way to go.
New you can get ones like:

or use a programmable one like the MIDI Express XT (I think the MIDI Express is programmable, too..)
or go used with something like:

The outputs of each of your consoles/controllers would go into the MIDI interface/patchbay/switch and you would use that to control which console/controller has it's MIDI output routed to the Grace.
