Simons method is just fine - just notice that these freeze tracks are rendered before channelstrip fx (prosessing) and level - strangely enough not like in Logic Pro 8, that include this. If you want to include the effects and level settings used in GB, use Ryans first description (take some time, tho...). Just a choice.
