I found that you can run the iPad with an Airport Express, and let the Mac do Wi-Fi for EuCon only, and do internet/networking with ethernet (don't plug the AE into ethernet).
The other option is ethernet to the iPad with the USB camera adapter kit.
Both options isolate the iPad so it's off the LAN.
