My understanding is that beyond six, additional cores buy you faster bounce/rendering speeds but not better real time performance which is what you need for virtual instruments.

That's your choice. I dumped Apple behind them orphaning SCSI and NuBus. I've run into problems with VST and DX compatibility where there simply isn't any short of maintaining an old computer.

I hear it and my clients sitting beside me hear it provided the source is microphones and it's well recorded. The room doesn't even need to be all that quiet to hear the imaging.

My understanding is that dithering an aux is OK provided you don't add any signal processing downstream. Ideally, you want to dither the master fader tied to the same output.
