I use TouchOSC and Keyboard Maestro on Mac. You should check out Lemur. Even more powerful than TouchOSC. Cross platform. Works great.

Layouts on the S6 include knob functionality and layout. It is great! So it can has been done, but I wouldn't be surprised if it is a feature reserved for that console.
