I think you mean at OS 10.14 or below (?). I've not had any issues with QT bounce in Mojave.
That's disappointing. I was hoping to at least be able to go to Catalina, but it's totally doable.

No, I'm not running off a hub. I'm directly connected to the mini. So there should be no loss. The enclosures I'm using are 10Gbps so I wasn't expecting TB speed, but I was expecting over 1000mbps...
