Thanks for all the advice. General ideas:
32gb RAM
Intel i7 processor
M.2 drives
Windows 11
[plenty of cooling that is also quiet]
at least 3 USBC ports, maybe also a Thunderbolt

Thanks for all of the advice. I now have narrowed it down to either buying Sweetwater's creation station or building my own. I'm leaning towards building my own I think, but it is quite daunting....
