When I am putting down Midi tracks with the oxygen8 thru sampletank (drums, keys or
what have you), I get a bad latency between key strike, and the actual sound being audible.

Buy a pair of Rode NT 1's.....cheap, large capsule, and you can do very nice stereo
recordings of almost anything.
