I see there is a kits on eBay for the E5-2687 v2, which is an 8 Core 3.4 GHz. I hear these processors throttle back when they get too hot, and if true then the question becomes more complicated.

PT12.8.1 on Yosemite is best if you also plan to run some native plugins or VIs and want to avoid the dreaded CPU spikes that cause AAE-9171 errors/Halts or AAE-9173 Halts... otherwise Sierra or High...
