Its down to the source verses the track. Sounds like you are trying to record a MONO source(sound) onto a STEREO track and that's not how it works. Record a mono source to a mono track. Some examples...

Hmmm, this should not be happening(unless you have a boatload of AUX tracks). Not sure this will help, but open Setup>IO and select the BUS tab. On this window, try adding a few dozen new bus paths...
