When you open a session, it really should be from a Hard Drive and not on fixed media (CD-R.) Once it's on the CD, it's uneditable so maybe thats why the tracks are greyed out.

Just make sure you aren't using a TiBook 800. the lowest setting (last I heard, when the original 002 came out) is 128. 64 just won't work.
