You could always just Option click and set the outputs of tracks to none. Then when you want to playback just set them back. Don't know how you will overdub things when monitoring using your mixer...

I think when you hit PRE on the sends that just means its Pre-fader, meaning it will take the signal before it hits the fader and send it, with all the processing done on that signal.

You can create headphone mixes straight in Pro Tools if you want, all you have to do is create an Aux Input track and bus all tracks into the Aux track, just like you would on an actual console....

Check your H/W Buffer Size settings. Sounds to me like you have them set too low and your processor just can't handle it.
