For anyone curious, I talked to Apple again and they sent me this video which outlines how to downgrade from Sonoma to Ventura (or older, so long as your computer is compatible with that OS)

When I searched the model identifier it said the pre-installed MacOS was 13.4 (ventura) but when i tried to DL ventura it says I can't install it. So I think I would have to go the partition-route...

The tricky part is that it's a Mac Certified Refurbished one. So I don't know if the OS it "original shipped with" is the one when it original shipped with (definitely Ventura) or what they put on...

Ah, I called Apple Support and they said I couldn't downgrade from Sonoma -> Ventura. I didn't realize a partitioned drive would be able to run Ventura. I'll have to give that a whirl!

I respectfully disagree. If there’s an inherent delay caused by the processing involved with emulating the instrument, then wouldn't that delay be there when you're playing the virtual instrument...

Yes, and this isn't advanced midi stuff we're talking about -- this is literally the BARE minimum: if you record midi in pro tools it doesn't end up where you recorded it!
